What better meal of the day than breakfast? You may feel inlclined to argue with me, but how great is it to have breakfast for dinner? And even if you don't necessarily agree with that statement, how often to you hear people say they're going to have dinner for breakfast? Not so much.

Combining a great mealtime with pizza? Sounds like a match to me. Note - if you want to actually have this for  breakfast, you will have to get up pretty early in order to give the dough enough time to proof. This would work best for a brunch or dinner type situation.

BREAKFAST PIZZA

  • 3 Cups bread flour

  • 1/2 Cup Yellow Corneal

  • 1 1/2 Cups Water

  • 1 Teaspoon Instant Yeast

  • 1 Tablespoon Sugar

  • 1 Teaspoon Salt

  • 2 Tablespoons Corn Oil

1. Combine all the dry ingredients in a large to medium sized mixing bowl. Add the oil and stir until well combined. Add most of the water and stir until your feel like it has been fully incorporated. Add the remaining water, a little at a time until a rough dough has formed.

2. Knead the dough, pressing down into it with the palm of your hand, turning the dough back towards yourself and pushing down again. Keep flour on hand and dust the counter and dough as it begins to get sticky. You will feel the gluten strands tightening as you work. Five to ten minutes of kneading should be sufficient.

3. Put the dough in a bowl and cover it with plastic. Let it rise on the counter for several hours. For ideal development, put the dough into the fridge. Let it rest there until the next day. Just make sure you pull the dough out several hours in advance so it can come back down to room temperature. If you are making the pizza for breakfast, you will need to make the dough the night before. I would suggest putting it in the fridge and getting up early to take it out, at least several hours before baking. Otherwise, you can mix the dough and leave it out overnight. Keep in mind though that your yeast might not survive the night.

If you are making the pizza for lunch or dinner, just make sure you are mixing the dough several hours in advance so there is enough time for it to rise.

4. Pre-heat the oven to 500 degrees. If you are using a hearth stone, make sure it is preheating inside the oven

5. Prepare your toppings. If you have meat, it will need to be cooked. Saute any vegetables as well. Now you will need to scramble your eggs, adding the rest of your toppings in order to create a more balanced, unified flavor. 

6. Roll out your pizza crust. Add the cheese first, followed by the egg/topping mixture. Bake the pizza for ten to thirteen minutes. Allow to cool for several minutes before serving.
